Traditional 58mm filter baskets require a finer grind of 18g of coffee grounds to achieve a stable 9 bar extraction pressure. This can increase extraction yield and provide a more balanced flavour, but it can also easily extract bitter substances and off flavours.
 
With a step-down portafilter basket, using the same 18 grams of coffee grounds, or even less, the smaller basket diameter results in a thicker coffee puck, requiring only a coarser grind. This is conducive to extracting sweeter espresso while reducing the sharp flavours in the coffee. Overall, the resulting espresso is sweeter, more aromatic, and has a smoother mouthfeel.
 
How does the iKape variable diameter basket work? When the basket is deeper, the coffee puck is thicker, and the water flow through the coffee puck changes. The pressurised water flow resistance increases, and the extraction slows down. This results in longer contact time between the coffee grounds and water, leading to more uniform extraction. Also, the chances of channelling are reduced.
